Since we spent 2 days last week eating saltines and drinking Ginger Ale, I decided this week will be another “pantry challenge” week! I plan to run to Kroger later in the week to grab some “freebies” in the big Daytona 300 sale, plus a few things for the following week. I like “lite” shopping weeks, when I can rely on what I’ve got stashed in the fridge and freezer! I also would like to keep better track of what we’ll have for breakfast and lunch as well. Burn a little, eat a little! Our bike ride over here was a bit strenuous, as we took a detour so we could put a blanket down for the symphony tonight. But we made it! Once we were at Karen’s, Matt wanted to go for a run around her neighborhood. I had planned to do the elliptical, but a run sounded good so I agreed to a short one. 3 miles later, we were back inside and spent about 15 minutes chatting and weight lifting before I declared it was time for lunch! For the first time in my adult life I made a meal that I conceptualized on my own and it came out good.
